基本油醋汁 Basic Vinaigrette
材料 Ingredients
| 橄欖油, 葡萄籽油, 芥菜籽油 …等 |
| Olive oil, Grape seed oil, Canola oil …etc. |
| 紅酒醋,蘋果醋,香檳醋,檸檬汁,義大利黑醋…等。 |
| Red win vinegar, cider vinegar, champagne vinegar, lemon juice, Balsamic vinegar….etc. |

| 白糖,蜂蜜,蜜糖漿,楓糖…等。 |
| Granulated sugar, Honey, Molasses…etc. |
| 芥末醬,番茄醬,甜辣醬…等。 |
| Dijon mustard, Ketchup, Sweet & spicy sauce… etc. |
| 辣椒粉,咖哩粉,黃薑粉,孜然粉…等。 |
| Chili powder, curry powder, turmeric powder, cumin powder…etc. |
乾香草 Dried herb | 1/4 | 小匙 tsp |
| 百里香,羅勒葉,巴西利葉…等 |
| Thyme, Basil, Parsley…etc. |
鹽 Salt | 1/3 | 小匙 tsp |
黑胡椒 Black pepepr | 1/4 | 小匙 tsp |
做法: 將以上除了橄欖油以外的材料在一小碗裡打勻,再慢慢加入橄欖油用打蛋器打到乳化為止。或者可以直接將所有材料放進一小瓶,加蓋手搖到油乳化即可使用。也可以將所有材料放進食物處理機或果汁機打到乳化。
Method: Whisk all the ingredients except for the olive oil in a small bowl. Then gradually add the olive oil, whisking until emulsified. You can also shake the ingredients in jar or process them in a blender.
