做法:
1. | 牛油切大塊裝在玻璃量杯,再放進微波爐微到牛油完全融化,大約1分鐘。也可以在小鍋裡用小火煮化。 |
2. | 將蛋黃,檸檬汁,鹽和番椒粉放入果汁機內用中速打20秒。 |
3. | 果汁機轉低速,將融化的牛油緩緩地成一條細線倒進果汁機,牛油和蛋黃及檸檬汁結合後會成為濃稠的蛋黃醬,請立即使用。如果醬過於濃稠可加入少許水或牛奶攪拌到你喜歡的稠度。 |
PROCEDURE
1. | Cut the butter into cubes and put them in a glass measurement cup. Microwave it until the butter is completely melts, approx.. 1 minute. You can also melt the butter in a small pot over low heat. |
2. | Place the egg yolks, lemon juice, salt and cayenne pepper into a blender and blend the mixture in medium speed for 20 seconds. |
3. | Turn the speed down to low. With the machine running, pour the hot melted butter in a thin stream into the blender. The mixture should become rich and creamy. Serve immediately. If the sauce is too thick, add little water or milk and stir until reach desired thickness. |
