派皮麵團 Pie Dough

材料 Ingredient
中筋麵粉 All purpose flour2 杯 cup
冰牛油 Cold butter12 大匙 Tbs
冰水 Ice water 6 大匙 Tbs
泡打粉 Baking soda 1/2 小匙 tsp
鹽 Salt 1/2 小匙 tsp
糖 Sugar1/2 小匙 tsp
註:如果做甜派就將鹽改為1/8小匙。
Note: For sweet pies, reduce the salt to 1/8 tsp.

做法
1.將麵粉﹐泡打粉,鹽和糖放進碗內拌勻。
2.將冰牛油切成2cm小塊,加入麵粉內略拌,確定每塊牛油都裹有麵粉。如果牛油已經開始融化,放進冰箱凍硬後再拿出使用。
3.食物處理機裝上金屬刀片,倒入麵粉後蓋上蓋子。用斷續(pause)功能按十下,此時牛油大約為豆子大小。
4.食物處理機轉成中速並讓其持續運轉,緩緩地倒入冰水,等麵團一成型就立即關機。
5.將麵團用保潔膜包好,放進冰箱至少30分鐘再使用。



PROCEDURE
1.Mix the flour, baking soda, salt and sugar in a bowl.
2.Cut the butter into 0.75" cubes. Add the butter in the flour mixture and gently mix. Make sure that each butter cube is coated with flour. If the butter is melting, put the bowl in the fridge until the butter is hard again.
3.Add the flour and butter into a food processor with a metal blade. Cover and press "pause" 10 times. The butter will be pea size.
4.Turn the processor to medium speed and keep it running. Slowly add the ice water. Turn the machine off right after the water is absorbed by the flour and the dough is form.
5.Wrap the dough with a piece of food plastic wrap. Store it in fridge for at least 30 minutes.
