做法:
1. | 將魚香醬汁準備好。豆腐切成16塊。 |
2. | 平底鍋燒熱後加入2大匙油﹐將豆腐一塊一塊放進鍋內用中火煎黃。翻面將另一面也煎黃。豆腐要入鍋前先在紙巾上按一下﹐以免油遇水濺爆。將豆腐盛出備用。 |
3. | 炒鍋燒熱後,加入魚香醬汁A料爆香,再加絞肉炒散。 |
4. | 加入豆腐,胡蘿蔔片,魚香醬汁B料和高湯翻炒數下。繼續用中火煮到醬汁黏稠即可離鍋,中途要拌炒一下。裝盤後撒上蔥花。 |
PREPARATION
1. | Prepare the Spicy Garlic Sauce. Cut the tofu into 16 equal pieces. |
2. | Add 2 tbs of oil in a heated pan. Place in the tofu one by one, pan-fry them over medium heat until they are golden brown on both sides. Press each tofu on a paper towel before being placed in the pan to avoid oil spilling. Set the cooked tofu aside. |
3. | Add the Part A from the Spicy Garlic Sauce to a heated work and sauté until aromatic. Place in the ground pork and stir until the pork is loosened. |
4. | Add the tofu, carrot slices, Part B from the Spicy Garlic Sauce and stock and mix. Continue to cook over medium heat until the sauce is thick and shining, stir occasionally. Plate the dish and sprinkle with minced scallions. |
