註:四神是指茯苓、芡實、蓮子、淮山。市面上賣的四神包內還多添加薏仁。
Note: The four Chinese herbs include Poria, Gorgon, Lotus Seeds and Dried Mountain Yam. The store-bought pack usually has barley too.
做法
1. | 參考豬肚處理將豬肚煮熟後切成1cm寬小條。 |
2. | 將水,四神,豬肚和薑放進湯鍋裡燒滾後將浮在湯上的渣滓撇掉。 |
3. | 加入鹽和米酒。火轉小,加蓋後煮1個小時或煮到豬肚達到你喜歡的軟度即可。 |
PROCEDURE:
1. | Refer to Handle Pork Stomach to cook the pork stomach. Cut it into 0.5" wide strips. |
2. | Place the water, 4 Chinese herbs, pork stomach and ginger in a soup pot and bring the mixture to a boil. Skim off the foam at the surface of the soup. |
3. | Add the salt and rice wine. Turn the heat to low. Cover and simmer for 1 hour or until the pork stomach reaches desired tenderness. |
