檸檬愛玉 Lemon Aiyu Jelly

材料 Ingredients
愛玉籽Ficus pumila seeds 40 克 g (1.4 oz)
棉布袋 Cotton sachet bag 1 個 ea
冷開水 Cold boiled water2+10 杯 cup
檸檬 Lemon 2 個 ea
碎冰 Crushed ice 適量 proper amount
基本糖漿 Basic Syrup 適量 proper amount

做法
1.將愛玉籽裝進棉布袋內,封口處綁緊。
2.手洗乾淨。將棉布袋放進2杯開水中略為沖洗。水丟棄不要。
3.10杯水裝在大盆內,放進棉布袋用手搓揉到愛玉籽的膠質全部釋放出來,約15分鐘。
4.大盆加蓋後放進冰箱冷藏到呈果凍狀,約1小時。
5.將一個檸檬擠汁,另一個則切成薄片。
6.食用時舀適量愛玉凍到小碗裡用湯匙切碎,依序加入碎冰,糖漿,檸檬汁和檸檬片。依照各人口調整份量。



PROCEDURE
1.Place the ficus pumila seeds in a cotton sachet and tie the opening tightly.
2.Wash your hands thoroughly. Place the cotton sachet in 2 cups of water and rinse roughly. Discard the water.
3.Place 10 cups of water in a large bowl. Dip the cotton sachet into the water and gently rub until all the pectin of the seeds is released, approx. 15 minutes.
4.Cover the bowl and store it in the fridge until it becomes jelly, approx. 1 hour.
5.Squeeze one lemon and reserve the juice. Thinly slice the other one.
6.To serve the Aiyu jelly, place proper amount of Aiyu jelly in a small bowl and chop into small pieces with a spoon. Add some crushed ice, syrup, lemon juice and lemon slices. Adjust the portion as you like.
