做法:
1. | 將糯米洗乾淨後泡在水裡3個小時,水要蓋過糯米。 |
2. | 糯米濾乾後加入4大匙鹼水和3大匙食用油拌勻。 |
3. | 請參考包粽子注意事項清洗粽葉,準備繩串及包好三角型粽子,大約可包15個粽子。每個粽子只要用1片粽葉,葉片刷上薄薄一層油,注意只能包7分滿。 |
4. | 粽子放進深鍋裡,加水蓋過粽子。加蓋用大火煮滾後,轉最小火煮3個小時。也可用壓力鍋煮滾後轉最小火煮一個小時。 |
5. | 等粽子冷卻後放進冰箱冰透。此粽宜吃冰的,佐以白糖或楓糖漿。 |
Procedure:
1. | Rinse the rice then soak it in cold water for 3 hours - the water must cover the rice. |
2. | Drain the rice. Mix the rice with 4 tbs of Potassium carbonate & sodium bi-carbonate solution and 3 tbs of cooking oil. |
3. | Refer to Things to know about making zhongzi to clean the bamboo leaves, prepare a bundle of cotton strings and wrap the zhongzi into triangle shape. Use one leave per zhongzi. Brush a thin layer of oil over each leaf before wrapping. The rice filling should be 70% full only. |
4. | Place the zongzi in a stock pot. Add water until it covers the zongzi. Bring the water to a boil. Cover and cook in the lowest heat for 3 hours. You can cook the zongzi in a pressure cooker for 1 hour. |
5. | Store the zhongzi in the fridge after they cool down. Serve the zhongzi cold and with granulated sugar or maple syrup. |
