鹼粽 Alkali Zongzi (Rice Dumplings)

材料 Ingredients

圓糯米Short-grain glutinous rice 2 磅 lb (900g)
鹼水 Potassium carbonate & sodium bi-carbonate solution4 大匙 Tbs
食用油 Cooking oil3 大匙 Tbs
乾竹葉 Dried bamboo leaf 15 葉 ea
棉線 Cotton twine 適量 Proper amount


做法:
1.將糯米洗乾淨後泡在水裡3個小時,水要蓋過糯米。
2.糯米濾乾後加入4大匙鹼水和3大匙食用油拌勻。
3.請參考包粽子注意事項清洗粽葉,準備繩串及包好三角型粽子,大約可包15個粽子。每個粽子只要用1片粽葉,葉片刷上薄薄一層油,注意只能包7分滿。
4.粽子放進深鍋裡,加水蓋過粽子。加蓋用大火煮滾後,轉最小火煮3個小時。也可用壓力鍋煮滾後轉最小火煮一個小時。
5.等粽子冷卻後放進冰箱冰透。此粽宜吃冰的,佐以白糖或楓糖漿。



Procedure:
1. Rinse the rice then soak it in cold water for 3 hours - the water must cover the rice.
2.Drain the rice. Mix the rice with 4 tbs of Potassium carbonate & sodium bi-carbonate solution and 3 tbs of cooking oil.
3.Refer to Things to know about making zhongzi to clean the bamboo leaves, prepare a bundle of cotton strings and wrap the zhongzi into triangle shape. Use one leave per zhongzi. Brush a thin layer of oil over each leaf before wrapping. The rice filling should be 70% full only.
4.Place the zongzi in a stock pot. Add water until it covers the zongzi. Bring the water to a boil. Cover and cook in the lowest heat for 3 hours. You can cook the zongzi in a pressure cooker for 1 hour.
5.Store the zhongzi in the fridge after they cool down. Serve the zhongzi cold and with granulated sugar or maple syrup.
