葡式釀螃蟹 Portuguese Stuffed Crab (Sapateira Recheada)

材料 Ingredients
螃蟹 Crab 2 隻 ea (1.5kg /3.5lbs)
水煮蛋 Hardboiled egg 1 個 ea
酸豆 Caper 2 小匙 tsp
美奶滋 Mayonnaise2 大匙 Tbs
威士忌 Wisky 1 大匙 Tbs
法式芥末 Dijon mustard 1 小匙 tsp
麵包粉 Bread crumb 1 大匙 Tbs
鹽 Salt 1/3 小匙 tsp
白胡椒 White pepper 1/4 小匙 tsp
紅燈籠辣椒粉 Paprika 1/2 小匙 tsp

做法﹕
1.參考螃蟹肉 螃蟹處理 把螃蟹煮熟,打開殼除去腮後每隻切成數小塊。用刀背將每隻蟹腳敲裂。將蟹殼裡和附著在身體的蛋黃和內臟挖出來放置一旁。將一個蟹殼清洗乾淨並擦乾。
2.烤箱預熱到450°F(235°C)。
3.水煮蛋,酸豆和蟹黃切成細丁後与內臟,美奶滋,威士忌,法式芥末醬,麵包粉,鹽,白胡椒和紅燈籠辣椒粉放進一個大碗裡拌勻後鑲在蟹殼裡。
4.將釀蟹殼放在烤盤上進烤箱烤15分鐘。加入螃蟹,繼續烤5分鐘。
5.取出釀蟹殼与螃蟹一起裝盤,食用以烤麵包或餅乾佐蟹殼裡的餡料。



PROCEDURE:
1.Refer to Picked crab meat and Handle Crab to cook the crabs, separate the shells from the bodies, remove the gills then cut the crabs into pieces. Crack the claws and legs by using the back of a knife. Spoon the crab mustard and roes from the shell and body and set them aside. Thoroughly clean and dry one of the shells.
2.Preheat the oven to 450°F(235°C).
3.Finely chop the hardboiled egg, capers and crab roes. Place everything except for the crab pieces in a big bowl and mix well. Stuff the mixture into the cleaned crab shell.
4.Please she stuffed crab shell on a baking pan. Bake for 15 minutes. Add the crab pieces to the pan and bake for another 5 minutes.
5.Plate the stuffed shell and crab pieces. Serve with toasted bread or crackers.
