越式酸甜蘿蔔 Đồ Chua (Vietnamese Daikon and Carrot Pickles)

材料 Ingredients
白蘿蔔(切粗絲) Daikon (matchstick cut)1-1/2 杯 cup
胡蘿蔔(切粗絲) Carrot (matchstick cut)1-1/2 杯 cup
鹽 Salt1/2+1/2 小匙 tsp
糖 Sugar 1/4 杯 cup
米醋 Rice Vinegar1/2 杯 cup
水 Water1 杯 cup

做法﹕
1.將白蘿蔔和胡蘿蔔拌入1/2小匙鹽,抓勻後靜置至少30分鐘讓其出水。
2.將1/2小匙鹽,糖,米醋和水倒進乾淨的玻璃罐裡,然後放到微波爐微1.5分鐘。取出玻璃瓶,用筷子稍微攪拌一下確定糖和鹽都已溶化。放在一旁待涼。
3.將蘿蔔絲擠乾後裝入瓶裡。晃動瓶子讓全部蘿蔔絲都浸泡再糖醋汁裡。放進冰箱冷藏至少30分鐘再食用。



PROCEDURE:
1.Peel the daikon and carrot and cut them into matchstick like strips. Rub 1/2 tsp. of salt with the daikon and carrot. Set them aside for at least 30 minutes to sweat.
2.Add 1/2 tsp. of salt, sugar, rice vinegar and water in a clean glass jar and microwave for 1.5 minutes. Remove the jar from the microwave and stir with a chopstick until the salt and sugar are dissolved. Set it aside to cool down.
3.Squeeze the daikon and carrot strips dry. Add them into the glass jar. Sake the jar to make all the daikon and carrot strips in the brine. Store in the fridge for at least 30 minutes before serve.
