Fish with Dark Vinegar Dressing

1. | Prepare the Dark Vinegar Dressing. |
2. | Clean the fish. Cut the head and tail off, then cut the body into 4 sections. |
3. | Spread salt and pepper on both sides of the fish sections. Let them be marinated for 5 minutes. Pat dry the fish with paper towels before cooking to avoid oil spill while pan-frying. |
4. | Heat 1/4 cup of oil in a non-stick pan. Pan-fry the fish over high heat for 2 minutes. Turn the heat to medium and continue pan-frying for another 4 minutes. Turn the fish over and do the same. |
5. | Place the fish on a plate; pour over the mixed Dark Vinegar Dressing and serve. |

1. | 準備香醋涼拌醬。 |
2. | 將魚洗乾淨,去頭去尾後切成四段。 |
3. | 將鹽和胡椒撒在魚兩面醃5分鐘。入鍋前用紙巾將魚擦乾以免煎的時候油爆。 |
4. | 將1/4杯油在鍋裡燒熱,放進魚先用大火煎2分鐘﹐再用中火煎4分鐘。翻面同樣方式煎6分鐘。 |
5. | 將魚盛出裝盤,淋上香醋涼拌醬即可。 |
