(Japanese Deep-Fried Oysters)

做法
1. | 將生蠔用1大匙麵粉輕輕拌勻,再放在濾網內用水沖洗乾淨後濾乾。將生蠔放在紙巾上吸乾剩餘的水份。 |
2. | 準備麵包粉糊。 |
3. | 將每隻生蠔裹上薄薄一層麵粉,再沾滿蛋液, 最後裹上麵包粉。 |
4. | 將油熱到350°F(1750°C)。生蠔一個一個地放進油鍋用中火炸到金黃,炸時生蠔之間要有空間。炸好放在紙巾上吸乾油份。 |
5. | 食用時佐以芥末醬和日式牛排醬。 |
PROCEDURE
1. | Gently mix the oysters with 1 tbs. of flour. Wash the oysters through a strainer then drain the water. Transfer the oysters onto paper towels to absorb remaining water. |
2. | Prepare the Bread Crumb Coating。 |
3. | Coat each oyster with a thin layer of flour, then with eggs, finally with the bread crumbs. |
4. | Heat the oil to 350°F(1750°C). Place in the oyster one by one and fry over medium heat until golden brown. Be sure there is enough space among the oysters. Transfer the fried oysters onto paper towels to absorb the excessive oil. |
5. | Serve the oysters with hot mustard and Japanese tonkatsu sauce. |
