Chicken Soup with Shiitake Mushrooms

INSTRUCTIONS
1. | Place the chicken pieces into a soup pot; add water until it covers the chicken. Bring the water to a boil. |
2. | Drain the water. Rinse each piece of chicken under running water. Also wash and scrub clean the soup pot. |
3. | Place the chicken, 8 cups of water, shiitake mushroom and ginger in the pot; bring the mixture to a boil. Skim off the foam and fat at the surface of the soup. |
4. | Add rice wine and salt for seasoning. Cover and simmer over low heat for 40 minutes. Add wolfberry and cook for another 5 minutes. |

1. | 將雞塊放進鍋裡,加水至水蓋過雞肉。加蓋用大火煮到水滾。 |
2. | 把整鍋倒進濾網濾乾水份。每塊雞肉,並把湯鍋也刷洗乾淨。 |
3. | 將雞放回鍋裡加8杯水﹐香菇和薑片用大火煮滾﹐將浮在湯上的渣滓油脂撇掉。 |
4. | 加入酒和鹽調味。加蓋後關最小火煮40分鐘。加入枸杞再煮5分鐘即可。 |
