Chicken Soup with Shiitake Mushrooms

INGREDIENTS
Whole Chicken (cut chunks/ remove head and feet)3 lb (1.35kg)
Dried shiitake mushroom (rehydrated)12 small
Wolfberry 2 Tbs
Ginger (sliced) 30 g
Salt1-1/4 Tbs
Rice wine1/3 cup
Water 8 cup

INSTRUCTIONS
1.Place the chicken pieces into a soup pot; add water until it covers the chicken. Bring the water to a boil.
2.Drain the water. Rinse each piece of chicken under running water. Also wash and scrub clean the soup pot.
3.Place the chicken, 8 cups of water, shiitake mushroom and ginger in the pot; bring the mixture to a boil. Skim off the foam and fat at the surface of the soup.
4.Add rice wine and salt for seasoning. Cover and simmer over low heat for 40 minutes. Add wolfberry and cook for another 5 minutes.

做法
1.將雞塊放進鍋裡,加水至水蓋過雞肉。加蓋用大火煮到水滾。
2.把整鍋倒進濾網濾乾水份。每塊雞肉,並把湯鍋也刷洗乾淨。
3.將雞放回鍋裡加8杯水﹐香菇和薑片用大火煮滾﹐將浮在湯上的渣滓油脂撇掉。
4.加入酒和鹽調味。加蓋後關最小火煮40分鐘。加入枸杞再煮5分鐘即可。
