做法
1. | 將魚片略微沖洗後擦乾再切成8cmx3cm小塊。 |
2. | 將豆豉醬汁準備好。 |
3. | 魚塊用基本(淡)醃料醃20分鐘。 |
4. | 不沾鍋燒熱後加入2大匙油,放進魚塊用中火將兩面煎黃。盛出魚片備用。 |
5. | 加入豆豉醬汁 A 料在炒鍋內炒香。 |
6. | 加入豆豉醬汁 B 料,魚塊和蔥粒快炒至醬汁粘稠。 |
PROCEDURE
1. | Rinse and dry the fish. Cut the fish in to 3"x1" strips. |
2. | Prepare the Black Bean Sauce. |
3. | Marinate the fish with the Light Basic Marinade. |
4. | Add 2 tbs. of oil in a heated non-stick pan. Pan-fry the fish in medium heat until both sides of the fish are golden brown. |
5. | Add the part A from the Black Bean Sauce recipe and sauté until aromatic. |
6. | Add the part B from the Black Bean Sauce recipe, fish and diced scallions, and sauté until the sauce is thick and sticky. |
