香醋茄子 Eggplants in Dark Vinegar Dressing

材料 Ingredients
中國茄子 Chinese eggplant 2 條 each
香醋涼拌醬Dark vinegar dressing 1 份 portion


做法:
1.準備 香醋涼拌醬
2.茄子洗乾淨後切掉頭部,直切兩刀成4條,在切成8cm小段。
3.燒滾半鍋水。
4.把茄子放進滾水裡。蓋上一個盤子將茄子壓在水裡後蓋上鍋蓋。用大火煮2分鐘後撈出濾乾水份。
5.茄子裝盤後淋上香醋涼拌醬即可。此菜可熱食或冷食。



Procedure:
1.Prepare Dark vinegar dressing .
2.Wash the eggplants and remove the tip. Quarter the eggplants lengthwise then them cut into 3" segments.
3.Boil a half full pot of water.
4.Add the eggplants in the boiling water and top with a small plate so the eggplants are under water. Cover the pot and cook over high heat for 2 minutes. Remove the eggplants from the pot and drain the water.
5.Plate the eggplants and top with the Dark Vinegar sauce. Serve the dish hot or cold
