山竹牛肉丸 Steamed Beef Balls on Tofu Skin

材料 Ingredients
牛絞肉 Ground beef 1 磅 lb (450g)
絞肉醃料(淡) Ground meat marinade (light)1 份 portion
蠔油 Oyster sauce1 大匙 Tbs
嫩豆腐 Silk tofu1/2 盒 pack
陳皮(泡軟切碎) Dried tangerine peel (dehydrate and chop)2 大匙 Tbs
香菜(切碎) Cilantro (minced) 1/4 杯 cup
荸薺(切碎) Water chestnut (minced) 1/2 杯 cup
腐皮(大張) Tofu skin (large)1 張 sheet

做法﹕
1.把絞肉平鋪在塑膠袋內(約1cm厚度)後放進冷凍庫凍到半硬(在冷凍狀態但切得動)。
2.拿出絞肉,去掉塑膠袋再將凍絞肉切成1cm小塊。
3.攪拌機裝上漿狀腳,絞肉放進攪拌缸後用低速打4分鐘(由1速漸進到3速),再轉成6速打到肉變泥狀有彈性,大約5分鐘。
4.準備絞肉醃料(淡)。將配方中的鹽從1/2大匙降為1小匙並省略6大匙水。
5.將豆腐捏碎放進攪拌缸,再加入陳皮,荸薺,絞肉醃料和蠔油。用低速將餡料攪拌均勻並呈黏稠狀。最後加入香菜拌勻。
6.將腐皮剪成小塊。取一小盤,鋪上數塊腐皮。
7.手上抹上一點麻油。拿起一團肉漿,由虎口擠出小丸。用湯匙背面將肉丸抹平再放到腐皮上。
8.將裝牛肉丸的小盤放進竹蒸籠裡,用中火蒸10分鐘。我的小蒸籠可以容納3個牛肉丸。你可以做好丸子後放在一個大盤內一次蒸完。
9.牛肉丸宜搭配辣醬油食用。

PROCEDURE:
1.Evenly distribute the ground beef in a plastic bag to form a 1 cm thick layer and store it in a freezer until semi-frozen (You have no problem cutting through the beef, but the beef is still mostly frozen).
2.Take out the ground beef, remove the plastic bag then cut the frozen beef into 1cm cubes.
3.Install the flat beater to the mixer and beat the ground beef at low speed for 4 minutes (gradually from speed 1 to speed 3). Turn the speed to 6, and continue beating the beef until it becomes elastic and puree like, approx. 5 minutes.
4.Prepare the Ground Meat Marinade (Light). Reduce 1/2 tbs. of salt in the recipe to 1 tsp. Also omit the 6 tbs. of water.
5.Crush the tofu then add it to the mixing bowl. Add the dried tangerine peel, water chestnut, Ground Meat Marinade (Light) and oyster sauce. Mix over low speed until all ingredients are combined and the mixture becomes sticky. Mix in the minced cilantro.
6.Cut the tofu skin into small pieces. Place severl pieces on a small plate.
7.Spread a little sesame oil on your hand. Place the meat puree on the oiled palm. Close your palm loosely and form a circle opening with your index finger and thumb. Push the meat puree through the opening and form a small ball. Use the back of a spoon to smooth the surface of the meatball, then place it onto the tofu skin.
8.Place the meatballs on the small plate in a bamboo steamer and steam for 10 minutes. My little bamboo steamer can hold 3 meatballs. You can make the meatballs and steam them all in one time.
9.Serve the beef meatballs with Worcestershire sauce.
