醬燒金線魚 Itoyori Nitsuke
(Simmered Golden Thread Bream in Soy Sauce)


材料 Ingredients
金線魚 Golden thread bream1 條(小) small
柴魚湯頭 Bonito Stock 1 杯 cup
淺色醬油 Light soy sauce1/2 杯 cup
清酒 Sake wine1/2 杯 cup
味霖 Mirin1/4 杯 cup
糖 Sugar2 大匙 Tbs
金針菇(切除底部) Enoki mushroom (bottom trimmed)1 杯 cup
胡蘿蔔(切細絲) Carrot (finely julienned)1/2 杯 cup
蔥綠(切細絲) Scallion green part (finely julienned)1/4 杯 cup
食用油 Cooking oil1 大匙 Tbs

做法:
1.魚清洗乾淨後用紙巾擦乾,並對切成兩半。
2.柴魚湯頭,醬油,清酒,味霖和糖在鍋裡燒開。轉中火,放進魚加蓋煮熟,大約8分鐘。
3.炒鍋燒熱後放進1大匙油,金針菇和胡蘿蔔絲。快炒1分鐘後加入1湯勺煮魚醬汁。拌入綠蔥絲繼續煮到醬汁收乾。

PROCEDURE:
1.Wash and clean the fish. Pat dry with paper towels. Cut the fish in half.
2.Place the Bonito Stock, soy sauce, sake, mirin and sugar in a pot; bring the mixture to a boil. Turn the heat to medium; add the fish; cover and cook until the fish is done, approx. 8 minutes.
3.Add 1 tbs. of oil, enoki mushroom and carrot in a heated pan. Sauté for 1 minute then add one ladle of the liquid from cooking the fish. Mix in the scallion and cook until the sauce is evaporated.
