(Simmered Golden Thread Bream in Soy Sauce)

做法:
1. | 魚清洗乾淨後用紙巾擦乾,並對切成兩半。 |
2. | 把柴魚湯頭,醬油,清酒,味霖和糖在鍋裡燒開。轉中火,放進魚加蓋煮熟,大約8分鐘。 |
3. | 炒鍋燒熱後放進1大匙油,金針菇和胡蘿蔔絲。快炒1分鐘後加入1湯勺煮魚醬汁。拌入綠蔥絲繼續煮到醬汁收乾。 |
PROCEDURE:
1. | Wash and clean the fish. Pat dry with paper towels. Cut the fish in half. |
2. | Place the Bonito Stock, soy sauce, sake, mirin and sugar in a pot; bring the mixture to a boil. Turn the heat to medium; add the fish; cover and cook until the fish is done, approx. 8 minutes. |
3. | Add 1 tbs. of oil, enoki mushroom and carrot in a heated pan. Sauté for 1 minute then add one ladle of the liquid from cooking the fish. Mix in the scallion and cook until the sauce is evaporated. |
