Calamari in Three-Cup Sauce

Ingredients
Small squid 1-1/2 lb (675g)
Basic marinade (light)1 portion
Three cups sauce (reduce part B to half, part A&C unchanged)1 portion
Corn starch1 tsp

Instructions
1.Clean the squid by following the instructions of Handle Squid. Cut each body crosswise in half.
2.Marinate the squid with the Basic Marinade (Light) for 15 minutes.
3.Prepare the Three Cups Sauce. Reduce part B in the recipe to half ; part A and C remain unchanged. Mix part B with 1 tsp. of corn starch.
4.Boil half pot of water then turn the heat to low. Blanch the squid in the hot water for 30 seconds. Transfer the squid to a strainer to drain the water.
5.Place part A from the Tree Cup Sauce in a heated pan; sauté until aromatic. Add part B from the Three Cup Sauce and bring the mixture to a boil.
6.Add the squid and stir over medium-high heat for 30 seconds. Mix in part C from the Three Cup Sauce and stir for another 30 seconds. Serve immediately.

做法
1.小卷處理乾淨,身體部份橫向切成兩段。請參考(見魷魚/花枝/烏賊處理)
2.小卷用基本醃料(淡)醃15分鐘。
3.準備三杯醬汁,配方中B部份的份量減少一半,並與1小匙芡粉拌勻。
4.燒滾半鍋水後轉小火,放進小卷燙30秒。盛出放在濾網內濾乾水份。
5.鍋燒熱後放進三杯醬汁A料爆香後加入三杯醬汁B料煮開。
6.放進小卷用中大火拌炒30秒後加入三杯醬汁C料再翻炒30秒即可。
