南瓜粉蒸排骨 Steamed Pumpkin and Spareribs Coated with Rice Powder

材料 Ingredients
小排骨 Sparerib 1 磅 lb (450g)
日本南瓜 Japanese Pumpkin 1 小顆 Small
豆瓣醃料 Bean paste marinade 1 份 Portion
粉蒸粉 Fen-Zheng (Rice) Powder 1 份 Portion
蔥花 Minced scallion 1 大匙 Tbs

註:請肉販將排骨切成3cm 寬長條。
Note: Ask your butcher to cut the spareribs into 3cm wide strips.

做法
1.將排骨切小塊。
2.把豆瓣醃料和粉蒸粉準備好。
3.將排骨用豆瓣醃料醃30分鐘。
4.將粉蒸粉加入醃好的排骨拌勻。
5. 南瓜洗乾淨後放進蒸籠或電鍋用大火蒸 20 分鐘。待冷卻後將南瓜頂部切開﹐挖掉中間的籽。再將瓜壁上的肉挖下墊在瓜的底部。
6. 把排骨放進蒸籠內用大火蒸 40 分鐘。取出排骨放進南瓜內後﹐回蒸籠繼續蒸 20分鐘。
7. 撒上蔥花即可裝盤。



PROCEDURE
1. Cut the spareribs into small pieces.
2. Prepare the Feng-Zhen powder and Bean Paste Marinade.
3.Marinate the spareribs with Bean Paste Marinade for 30 minutes.
4.Mix the Feng-Zhen powder with the spareribs thoroughly.
5. Wash the pumpkin. Steam it in a steamer or rice cooker for 20 minutes. Wait until the pumpkin cools down. Cut top off the pumpkin and remove the seeds and pulp. Scoop the pumpkin meat away from the rind and leave the meat in the pumpkin.
6. Steam the marinated spareribs in high heat for 40 minutes. Put the spareribs in the pumpkin bowl. Return the pumpkin with the spareribs back to the steamer to steam for another 20 minutes.
7. Sprinkle minced scallions on top of the spareribs and serve hot.
