Stir-Fried Beef with Sha-Cha Sauce

Ingredients
Beef Loin (thinly sliced) 2/3 lb (300g)
Basic marinade (dark) 1 portion
Onion (cut thick strips)1/2 large
Garlic (sliced)2 clove
Cooking oil 2+1+1 Tbs
Sha-Cha sauce 1 份 portion

PROCEDURE
1.Prepare the Sha-Cha Sauce.
2.Marinate the beef with the Basic Marinade (Dark) for 10 minutes. Mix the beef with 2 tbs. of oil right before cooking.
3.Place 2 tbs. of oil and beef in a non-stick pan. Quickly stir-frying the beef slices until they are half done. Transfer the beef onto a strainer to drain out the blood water and excessive oil.
4.Wipe the pan clean with a paper towel. Add 1 tbs. of oil and onion; sauté until the onion starts turning soft.
5.Add the Sha-Cha sauce and beef. Vigorously stir the beef and onion until they are 90% cooked.

做法
1.準備沙茶醬汁
2.牛肉用基本醃料(濃)醃10分鐘。要入鍋前加入2大匙油和大蒜拌勻。
3.平底不沾鍋燒熱后加入2大匙油和牛肉,用大火快炒到半熟。鏟出放在濾網上過濾掉血水和多餘的油。
4.原鍋擦乾淨,加入1大匙油和洋蔥用中火炒至洋蔥微軟。
5.倒入沙茶醬汁後再加入牛肉,快速用大火翻炒到肉9分熟即可離鍋。由於菜的熱度會繼續加熱牛肉﹐等吃的時候牛肉已是全熟。
