椒鹽芝麻牛肉 Sesame Beef with Salt & Pepper

材料 Ingredients
牛里肌肉 Beef Loin1 磅 lb (450g)
蛋 Egg 1 個 each
白芝麻 White sesame1/4 杯 cup
地瓜粉 Yam starch3 大匙 Tbs
油 Cooking oil3 杯 cup
基本醃料(濃) Dark basic marinade 1 份 Portion
椒鹽拌汁 Salt & pepper sauce 1 份 Portion

做法
1.將牛肉切成 3cm x 6cm 薄片。
2.將鹽酥拌汁準備好﹐拌汁配方中A部份的油不要。
3.將牛肉加蛋﹐芝麻和基本醃料醃 15分 鐘。
4.將牛肉加地瓜粉仔細拌勻。
5.將牛肉用大火 375F (190C) 炸酥後撈出。
6.將鹽酥拌汁加入炸好的牛肉拌勻即可。



PROCEDURE
1.Cut the beef into 1.5"x2.5" thin slices.
2.Prepare the Salt and Pepper Sauce, omit the oil from the Part A of the recipe.
3.Mix the beef with the egg, sesame seeds & Dark Basic Marinade and marinate for 15 minutes.
4.Mix the beef with the yam starch. Make sure that every slice is coated.
5.Deep-fry the beef slices in 375F (190C) heat they are crispy on the outside.
6.Mix the fried beef with Salt & Pepper sauce. Serve hot.
