牛油大蒜焗螃蟹 Baked Garlic Butter Crabs

材料 Ingredients
珍寶蟹 Dungeness Crab3 隻 ea
洋蔥 Onion 1 顆 ea
大蒜 Garlic 10 瓣 clove
扁葉巴西利 Flat leaf parsley 1 小把 small bunch
特級初炸橄欖油 Extra virgin olive oil 2 大匙 Tbs
牛油 Butter8 大匙 Tbs
白酒 White wine1/3 杯 cup
鹽 Salt1/4 小匙 tsp
黑胡椒 Black pepper1/4 小匙 tsp

做法﹕
1.烤箱預熱到375°F(190°C)。
2.洋蔥切成細絲,大蒜切片,扁巴西利葉取葉子部份切碎。
3.將橄欖油和大蒜放進小鍋內,用中小火將大蒜煎到微黃。加入牛油讓其融化。
4.加入鹽,黑胡椒,巴西利葉和白酒並攪拌均勻。熄火放置一旁備用。
5.參考處理螃蟹將螃蟹清理乾淨。每隻切成4塊,用刀背將蟹腳敲裂。
6.烤盤內鋪上洋蔥絲,上置螃蟹塊。將牛油大蒜醬汁均勻地淋在螃蟹上,再蓋上螃蟹蓋 (或蓋上錫箔紙)。
7.進烤箱烤到螃蟹全熟,大約30分鐘。
8.食用完剩餘的醬汁不要丟棄,可以用來拌義大利麵。



PROCEDURE:
1.Preheat the oven to 375°F(190°C).
2.Cut the onion into fine strips and the garlic into thin slices. Mince the parsley leaves and discard the stems.
3.Add the olive oil and garlic slices into a small pot. Cook over medium-low heat until the garlic is lightly brown. Add the butter and let it melt.
4.Add the salt, black pepper, parsley and white wine. Stir to combine. Turn off the heat and set the sauce aside.
5.Ref to "Handle Crabs" to clean the crabs. Cut each crab into 4 pieces. Crack the crab legs with the back of a knife.
6.Lay the onion strips on the bottom of a baking dish then top with the crab pieces. Evenly sprinkle the garlic butter sauce all over the crabs. Cover with the crab caps or foil paper.
7.Bake in the oven until the crabs cook through, approx. 30 minutes.
8.Do not discard the left-over sauce. It is a good sauce for pasta.
