洋芋雞肉椰奶咖哩 Chicken & Potato in Coconut Curry Sauce

材料 Ingredients
雞胸肉(切片) Chicken breast (sliced)1/3 磅 lb (150g)
馬鈴薯(切小塊) Potato (small chunk)2 杯 cup
胡蘿蔔(切小塊) Carrot (small chunk)1/2 杯 cup
洋蔥(切小塊) Onion (small chunk)1 杯 cup
冷凍碗豆 Frozen pea1/2 杯 cup
食用油 Cooking oil2 大匙 Tbs
沙爹醃料 Satay Marinade 1 份 portion
九層塔 Thai basil10 葉 leaf

做法
1.準備 沙爹醃料 。將其中椰奶的份量從1/4杯改成1-1/2杯。
2.湯鍋燒熱後加入2大匙油和洋蔥用中火炒到透明。
3.加入馬鈴薯,胡蘿蔔和沙爹醃料煮滾。轉小火,加蓋煮20分鐘。
4.放進雞肉,略為攪拌後繼續煮5分鐘。最後拌入碗豆和九層塔再煮1分鐘即可。




PROCEDURE:
1.Prepare the Satay Marinade . Change the coconut milk in the formula from 1/4 cup to 1-1/2 cup.
2.Add 2 Tbs. of oil and onion to a heated soup pot. Sauté until the onion is translucent.
3.Add the potato, carrot and Satay Marinade and bring the mixture to a boil. Turn the heat to low, cover and simmer for 20 minutes.
4.Stir in the chicken and continue to cooking for 5 minutes. Finally stir in the peas and Thai basil and cook for another minute.
