日式炒麵 Yakisoba (Japanese Stir-fried Noodles)

材料 Ingredients
油麵 Oil Noodle 1-1/3 磅 lb (600g)
梅頭肉(切薄片) Pork Butt (thinly sliced)2/3 磅 lb (300g)
基本醃料(濃) Basic Marinade(Dark)1/2 份 portion
食用油 Cooking oil2+2 大匙 Tbs
胡蘿蔔(切絲) Carrot (julienned)1/4 磅 lb (113g)
香菇(切片) Shiitake mushroom (sliced)8 朵(小) small
蔥(切段) Scallion (cut segments)4 支 stalk
高麗菜(切小塊) Cabbage (cut bite size)1/4 顆(中) medium
洋蔥(切絲) Onion (julienned)1 個(小) small
米醋 Rice Vinegar1/2 大匙 Tbs
水 Water1 杯 cup
炒麵醬汁 Fried Noodle Sauce1 份 portion

做法﹕
1.如果使用市面上賣的油麵,在熱水裡燙1分鐘,攪散後濾乾水份。
2.豬肉與 基本醃料(濃)拌勻後醃15分鐘。
3.準備炒麵醬汁。配方中的4大匙醬油用6大匙炸豬排沾醬替代。
4.鍋燒熱後加入2大匙油,蔥(白色部份)和香菇炒香﹐續加肉片炒散,肉色變白。
5.加入胡蘿蔔,高麗菜和炒麵醬汁A部份飯炒至高麗菜開始變軟。盛出炒好的餡料放在一旁備用。
6.原炒鍋加入2大匙油和洋蔥炒香。放進麵條,炒麵醬汁B部份,1/2大匙醋和1杯水拌炒至麵條著色。
7.最後加入上述炒好的配料及蔥綠,翻炒均勻即可。

PROCEDURE:
1.If using store-bought ramen, soak the noodles in hot water for 1 minute; stir to make the noodles loose. Drain the water and set the noodles aside.
2.Marinate the pork with Basic Marinade (Dark) for 15 minutes.
3.Prepare the Fried Noodle Sauce. Replace 4 tbs. of soy sauce with 6 tbs. of Tonkatsu Sauce.
4.Add 2 tbs. of oil, scallion (white part) and shiitake mushroom to a heated pan; sauté until aromatic. Place in the pork and stir until the pork slices are loose and the color turns white.
5.Add carrot, cabbage and Part A from Fried Noodle Sauce. Sauté until the cabbage starts turning soft. Set the mixture aside.
6.Place 2 tbs. of oil and onion to a wok; sauté until aromatic. Add the noodles, part B from the Fried Noodle Sauce, 1/2 tbs. of vinegar and 1 cup of water; stir until all noodles are colored from the sauce.
7.At last mix in the cooked pork, vegetables and scallion (green part). Stir until well combined.
