紅咖哩鮭魚 Salmon in Red Curry Sauce

材料 Ingredients
鮭魚片 Salmon Fillet2 片 ea
沙拉油 Cooking oil2 大匙 Tbs
紅咖哩醬 Red curry paste2 大匙 Tbs
椰奶 Coconut oil1/2+1 杯 cup
紅糖 Brown sugar2 小匙 tsp
魚露 Fish sauce1-1/2 大匙 Tbs
香菜葉 Cilantro leaf少許 few

做法﹕
1.依照煎魚排方法將鮭魚煎熟,可以不要調味。
2.將2大匙油,紅咖哩將和1/2杯的椰奶在燒熱的鍋子裡用中火炒香。隨即加入1杯椰奶,紅糖和魚露燒滾後熄火。
3.盤底淋上紅咖哩醬汁,上擺鮭魚,再以少許香菜點綴即可。



PROCEDURE:
1.Refer to Pan-fried Fish Filet to cook the salmon, omit the seasoning.
2.Add 2 tbs. of oil, red curry and 1/2 cup of coconut milk in a heated pan. Stir until combined and aromatic. Add 1 cup of coconut milk, brown sugar and fish sauce then bring the mixture to a boil. Turn the heat off.
3.Ladle the sauce on a plate, top with the salmon and garnish with cilantro leaves.
