Taiwanese Style Sticky Rice

Ingredients
Long glutinous rice3 cup
Chicken stock 2 cup
Pork loin (cut thin strips)1/2 lb (225g)
Basic marinade (dark) 1 portion
Dried shrimp (soaked) 2 Tbs
Dried Shitake Mushroom (rehydrated/sliced)5 medium
Fried Shallot 2 Tbs
Cooking oil 2 Tbs
Dark sesame oil3 Tbs
Fried noodle sauce (replace 2 tbs. of the 4 tbs. of soy sauce with 2 tbs. of dark soy sauce.) 1 portion

Instructions
1.Rinse the rice and drain the water. Soak the rice with chicken stock for at least 4 fours.
2.Marinate the pork with the Basic Marinade (Dark) for 10 minutes.
3.Place 2 tbs. of oil, dried shrimps and shiitake mushroom in a heated wok; sauté until aromatic. Add the pork and part A from the Fried Noodle Sauce; sauté until the color of pork turns white.
4.Add 3 tbs. of dark sesame oil, part B from the Fried Noodle Sauce and rice including the stock; stir over medium heat until all the stock is absorbed by the rice. Mix in the fried shallot.
5.Cover the bottom of a 10" bamboo steamer with a damp towel or parchment paper. Place the rice in the steamer and steam over medium heat until the rice is done, approx. 50 minutes. You can also cook the rice in a rice cooker based on the manufacture's instruction. Once the rice is done, sit for 20 minutes with lid on. Serve the rice with or without cilantro and sweet-spicy dipping sauce.

黑麻油3 大匙 Tbs
炒麵醬汁(4大匙醬油用2大匙生抽和2大匙老抽) 1 份 portion

註:3杯米=4電鍋量杯米。

做法
1.糯米沖洗乾淨後濾乾,再用高湯泡至少4小時。
2.豬肉絲與基本醃料(濃)拌勻後醃10分鐘。
3.鍋燒熱加入2大匙油,蝦米和香菇炒香﹐放進肉絲和炒麵醬汁A部份翻炒到肉色變白。
4.加入糯米帶連浸泡的高湯,炒麵醬汁B部份和3大匙黑麻油。用中火拌炒到高湯完全被米吸收。拌入油蔥酥。
5.10吋竹籠鋪上濕布或烤盤紙。將炒好的糯米放進竹籠用中火蒸熟,大約50分鐘。 也可以放進電鍋照平常煮白飯的方式煮,煮完後燜20分鐘。食用時可加甜辣醬和香菜增加風味。
