金平蓮藕 Kinpira Renkon
(Sautéed Lotus Root with Soy Sauce)


材料 Ingredients
蓮藕 Lotus root1/2 磅 lb (225g)
白芝麻 White sesame seed 2 大匙 Tbs
金平醬汁 Kinpira Sauce 1 份 portion
麻油 Sesame oil 1 小匙 tsp
七味粉 Shichimi (7-spice) powder 隨意 as desired

做法
1.蓮藕洗乾淨後削去外皮再成薄片。切好的蓮藕要馬上放進醋水(1大匙醋+3杯水)中以免發黑。
2.準備金平醬汁
3.鍋燒熱後加入蓮藕和金平醬汁,用中小火煮到醬汁剩下1/5,當中要不時翻面。
4.開中大火,加入芝麻和麻油翻炒至醬汁變黏稠。最後依各人喜好加入七味粉。

PROCEDURE
1.Wash the lotus root; peel off the skin; cut into thin slices. Place the lotus root in a bowl of vinegar water (1 tbs. of vinegar + 3 cups of water) to prevent it from turning black.
2. Prepare the Kinpira Sauce..
3.Add the lotus root and Kinpira sauce to a pan and bring the mixture to a boil. Cook over medium-low heat until the sauce is reduced to 1/4 - turn over the slices from time to time.
4.Turn the heat to medium-hight then add sesame seeds and sesame oil. Stir until the sauce is sticky. Sprinkle with shichimi powder as desired.
