(Sautéed Lotus Root with Soy Sauce)

做法
1. | 蓮藕洗乾淨後削去外皮再成薄片。切好的蓮藕要馬上放進醋水(1大匙醋+3杯水)中以免發黑。 |
2. | 準備金平醬汁。 |
3. | 鍋燒熱後加入蓮藕和金平醬汁,用中小火煮到醬汁剩下1/5,當中要不時翻面。 |
4. | 開中大火,加入芝麻和麻油翻炒至醬汁變黏稠。最後依各人喜好加入七味粉。 |
PROCEDURE
1. | Wash the lotus root; peel off the skin; cut into thin slices. Place the lotus root in a bowl of vinegar water (1 tbs. of vinegar + 3 cups of water) to prevent it from turning black. |
2. | Prepare the Kinpira Sauce.. |
3. | Add the lotus root and Kinpira sauce to a pan and bring the mixture to a boil. Cook over medium-low heat until the sauce is reduced to 1/4 - turn over the slices from time to time. |
4. | Turn the heat to medium-hight then add sesame seeds and sesame oil. Stir until the sauce is sticky. Sprinkle with shichimi powder as desired. |
