(Guo-Tie) Tube Shape Pot Stickers

Instructions
1. | Prepare the Three Delicacies Filling. Store the filling in the fridge. |
2. | Prepare the Half Boiled Dough. Divide the dough into 48 pieces (approx. 15g per piece) and form each piece into a ball. Cover the dough balls with plastic wrap or damp cloth and rest for 15 minutes. |
3. | Press each dough ball and roll it out into a 10cm/4" long oval shape disk. |
4. | Place 19g of the filling on the center of one dough disk. Lift two long sides toward the center and pinch together. Do not pinch the two ends. Repeat this step for the rest of the dough. (See photos below) |
5. | Add 2 tbs. of oil and guo-tie in a heated pan; cook in low heat for 1 minute. Mix 1/2 cup of water with 2.5 tsp. of flour and pour the mixture into the pan. Cover and cook in medium heat until all the liquid is absorbed. Uncover and continue pan-frying until the bottoms of the pot stickers are golden brown. |

做法
1. | 準備三鮮餡,放進冰箱冷藏。 |
2. | 準備半燙麵麵團。將麵團分成48等份(每份約15克),每份整成球型後用保鮮膜或濕巾蓋住麵團醒15分鐘。 |
3. | 每小份麵團先桿成圓形,再擀成10cm/4"長的橢圓麵片。 |
4. | 取19克三鮮餡放在麵皮中心,將兩邊麵皮向中心捏合呈長條裝,但兩端開口不要捏緊。將剩餘麵團依樣包好。(見下圖) |
5. | 平底鍋燒熱後加入2大匙油和鍋貼用小火煎1分鐘。1/2杯水和2.5小匙麵粉混攪後倒入鍋裡,加蓋用中火煎到水收乾。拿開蓋子後繼續煎到底部呈金黃色即可。 |
