(Jian-Jiao) Pot Stickers

Ingredients
Pot sticker filling1 portion
Half boiled dough1 portion
Cooking oil3 Tbs
Water1/3 cup
Soy sauce1/2 Tbs
Rice vinegar1 Tbs
Sesame oil1/2 tsp
Minced scallion1/2 Tbs
Minced garlic1 tsp

Instructions
1.Prepare the Pot Sticker Filling and Half Boiled Dough. Pick the filling you like.
2.Cut the dough into 10g pieces. Roll each piece into a ball then press each ball into a round disk. Mix the dough disks with little flour and store them in a plastic bag to rest for 10 minutes.
3.Roll out each dough disk into a 9cm/3.5" dia. disk that is thick in the center and thin around the edge.
4.Place approx. 20g of filling on the center of a dough disk. Lift one edge over the filling to the other side to form a half-moon shape and pinch the center together. On one side, make 3 folds on the right and make another 3 folds on the left; then pinch the folds to the other side (see pictures below). Repeat this step for the rest of dough disks and filling.
5.Heat 3 tbs. of oil in a non-stick pan. Add the pot stickers and pan-fry in low heat for 1 minute. Pour in 1/3 cup of water; cover and cook over medium heat until all the liquid is absorbed. Uncover and continue pan-frying until the bottoms of the pot stickers are golden brown.
6.Mix the soy sauce, vinegar, sesame oil, scallion and garlic in a sauce dish and serve the mixture as dipping sauce.

做法
1.準備煎餃餡料半燙麵麵團。請選擇你喜歡的餡料。
2.麵團切成10克的劑子後揉圓並壓扁。將劑子與少許麵粉拌勻後放進塑膠袋醒10分鐘。
3.每份麵球擀成9cm/3.5"直徑的圓麵片﹐邊緣要擀薄一點。
4.取20克的餡料放在水餃皮中心,麵皮對折成半圓型。中間捏緊後在一邊的兩側各捏出3摺,再與另一邊捏緊(見下圖)。重複此步驟將剩餘麵和餡料依樣包好。
5.平底不沾鍋內燒熱3大匙油。放進做好的煎餃用小火煎1分鐘後加水1/3杯。加蓋用中火煎到水收乾。拿開蓋子後繼續煎到底部呈金黃色即可。
6.將醬油,醋,麻油,蔥花和蒜末再小碗裡調勻做為沾醬。
