做法
1. | 3杯糯米加2杯水放進電鍋裡煮熟。 |
2. | 蝦米洗乾淨用水泡軟。香菇泡軟後切絲。香菜切碎。 |
3. | 將麵飯醬汁準備好。 |
4. | 鍋燒熱加入2大匙油﹐先炒香蝦米和香菇再加紅蔥頭。加入麵飯醬汁A&B部份和1/2杯水煮滾。 |
5. | 將項目4材料倒入煮好的糯米飯拌勻。 |
6. | 倒2大匙油在餐巾紙上再抹在每個模具的內部。 |
7. | 每個模具內先鋪上1-1/2大匙肉燥,再填滿糯米飯。 |
8. | 蒸籠裡水燒開,放進裝好糯米飯店模具用中大火蒸20分鐘。 |
9. | 取出模具。用小刀沿著模具邊劃一圈,再將米糕倒扣到盤子上。食用時淋些台灣小吃沾醬和香菜。 |
PROCEDURE
1. | Place 3 cups of glutinous rice and 2 cups of water in a rice cooker. Cook the rice by following the cooker's instruction. |
2. | Soak the dried shrimp and mushrooms until they are soft. Julienne the mushroom. Chop the cilantro. |
3. | Prepare the Fried Noodle Sauce. |
4. | Heat 2 tbs of oil in a wok. Sauté the dried shrimps and mushrooms until aromatic. Add the fried shallot, Fried Noodle Sauce part A & B and 1/2 cup of water. Bring the mixture to a boil. |
5. | Add the mixture on step 4 to the cooked rice and mix well. |
6. | Soak a paper towel with 2 Tbs. of oil. Grease inside of each ramekin with the paper towel. |
7. | Lay 1-1/2 Tbs. of Rou-Zao on the bottom of each ramekin. Fill each ramekin with the rice mixture. |
8. | Boil the water in the steamer. Place the ramekins in the steamer and steam over medium-high heat for 20 minutes. |
9. | Remove the ramekins from the steamer. Run a small knife around the sides of a ramekin and invert the rice on to a serving plate. Top the rice with Taiwanese Dipping Sauce and chopped cilantro. |
