蝦餃 Har Gow (Shrimp Dumplings)

材料 Ingredients
蝦(中) Shrimp (medium) 1-1/4 磅 lb (563g)
肥絞肉 Ground pork fat1/4 磅 lb (113g)
竹筍 Bamboo shoot1/4 磅 lb (113g)
絞肉醃料(淡) Ground meat marinade (light) 1 份 portion
水晶皮 Crystal dumpling wrappers 1 份 portion

做法
1.肥絞肉放進滾水內燙1分鐘以去除肉臊味。用濾網撈出後用冷水沖涼濾乾。
2.蝦剝殼後用水沖洗並抽掉砂腸﹐確定所有的黏液都沖洗掉。用紙巾包住吸乾所有水份後每隻蝦切成4小塊。竹筍切成1cm長細絲。
3.準備 絞肉醃料(淡) , 配方中的6大匙水省略不要。
4.將蝦,肥絞肉,竹筍和絞肉醃料放進攪拌機。機器裝上槳狀腳,用中速打到所有材料充分混合並呈黏稠狀。如果沒有攪拌機,將所有材料放在大盆中,用多雙筷子用力攪拌。做好的餡料放進冰箱冰至少30分鐘。
5.準備 水晶皮 。將粉團分切成11克的小塊,每塊揉圓後再用菜刀壓成圓薄片。
6.取約13克的餡料放在粉皮中心,將粉皮從邊緣拉向中心打折﹐一邊折一邊轉﹐打了12個折後將折子与未打折的邊邊捏緊收口。將剩餘粉團和餡料依樣包好,共可做40個。
7.蒸籠裡水燒開,蒸盤底部鋪上濕巾或不沾黏烘培紙。將蝦餃放進蒸籠加蓋用大火蒸6分鐘。
8.蝦餃要趁熱食用,所以要吃時再蒸。不立即吃的可以放在冷凍庫冷藏。

PROCEDURE
1.Blanch the ground pork fat in boiling water for 1 minute to remove the unpleasant smell. Take out the ground fat with a strainer. Rinse the fat with cold water then drain.
2.Shell, devein and rinse the shrimps. Thoroughly dry them with paper towels. Cut each shrimp into 4 pieces. Cut the bamboo shoot into 1cm long thin strips.
3.Prepare Ground Meat Marinade (Light) , omit the 6 tbs. of water in the recipe.
4.Install a flat beater attachment to the mixer. Place the shrimp, pork fat, bamboo shoots and Ground Meat Marinade in the bowl of a mixer. Mix with medium speed until all the ingredients are combined and sticky. If you don't have a mixer, use several chopsticks to stir the mixture vigorously. Store the shrimp filling in the fridge for at least 30 minutes.
5.Prepare Crystal Dumpling Wrappers . Cut the dough into 11g pieces. Roll each piece into a ball then press it with a Chinese cleaver knife into a thin round wrapper.
6.Place 13g of the shrimp filling on the center of a wrapper. Lift one edge toward the center and make a pleat, turn the dough a little and make another pleat. Continue to make 12 pleats in total. Pinch the pleats with the unpleated edge to seal the opening. Repeat this step for the rest of the dough and shrimp filling. This recipe can make 40 dumplings.
7.Boil the water in a steamer. Cover the bottom of the steamer with a wet towel or parchment paper. Place the dumplings in the steamer and steam for 6 minutes.
8.Serve the shrimp dumplings hot. If the dumplings are not consumed right away, store them in the freezer.
