做法:
1. | 腐竹切成1"(2.5cm)小段。大豆苗略切。 |
2. | 上湯在鍋裡燒滾後轉成小火,加入腐竹煨20分鐘。 |
3. | 快到20分鐘時另外燒開半鍋水,加入大豆苗燙30秒後隨即撈出移轉到上湯裡。 |
4. | 加入1/4小匙鹽繼續煨2分鐘(請依照上湯的鹹度自行調整鹽的份量)。夾出腐竹和豆苗裝盤,上撒些枸杞子,再淋上上湯即可。 |
PROCEDURE:
1. | Cut the bean curd sticks into 1"(2.5cm) segments. Roughly chop the pea tips. |
2. | Boil the consommé in a pot then turn the heat to low. Add the bean curd and simmer for 20 minutes. |
3. | After 20 minutes, boil half of a pot of water. Add the pea tips and blanch for 30 seconds. Transfer the pea tips into the consommé. |
4. | Add 1/4 tsp. of salt and continue to simmer for 2 minutes. Adjust the quantity of the salt based on the saltiness of the consommé. Place the bean curd and pea tips in a bowl and sprinkle with wolfberry. Pour the consommé over the pea tips. Serve hot. |
