Stir Fried Crab Claws

Ingredients
Crab claw1-2/3 lb (750g)
Yam starch3 Tbs
Cooking oil6+2 Tbs
Garlic (minced)2 clove
Ginger (minced)2 slice
Scallion (Cut into 2cm/0.75" segments)2 stalk
Sha-Cha sauce1 portion
Oyster sauce1 Tbs
Water1-1/2 cup
Thai basil (roughly chopped)1 small bunch
Red chili pepper (sliced)1 large

Instructions
1.Pat the crab claws dry with paper towels. Crack the claws by using the back of a knife.
2.Mix the crab claws with yam starch.
3.Heat 6 tbs. of oil in a wok. Put in the crab claws; tilt the wok a little, so the crab claws are all soaked in the oil; fry the crab claws for 3 minutes. Transfer the crab claws onto paper towels to absorb excessive oil.
4.Place 2 tbs. of oil, garlic, ginger and scallion in the same wok; sauté until aromatic. Add the Sha-Cha Sauce, oyster sauce and 1-1/2 cup of water; bring the mixture to a boil.
5.Add the crab claws. Cook and stir over high heat until the crab claws are cooked through. Mix in the Thai basil and chili pepper; serve immediately.



炒蟹鉗

做法
1.蟹鉗用紙巾擦乾後,用刀背將每隻蟹腳敲裂。
2.將蟹鉗與地瓜粉拌勻。
3.在炒鍋裡燒熱6大匙油。放進蟹鉗,將鍋子略微傾斜讓蟹鉗集中在油裡炸3分鐘。取出蟹鉗放到紙巾上吸去過多的油份。
4.原炒鍋放入2大匙油,大蒜,薑和蔥段用大火爆香。加入沙茶醬汁,蠔油和1-1/2杯水煮滾。
5.加入蟹鉗用大火翻炒到蟹鉗全熟。拌入九層塔和辣椒即可起鍋。
