Poached Beef with Enoki Mushroom

Instructions
1. | Prepare the Sweet Soy Sauce and set it aside. |
2. | Boil a 1/2 full pot of water. Poach the enoki mushroom in the boiling water for 2 seconds. Use a strainer to transfer the mushroom onto a deep dish plate. |
3. | Poach the beef in the same pot until the beef is 80% done. Transfer the beef to the plate and over the enoki mushroom. Place the scallion, garlic and red chili pepper on top of the beef. |
4. | Heat 2 tbs. of oil until smoking. Pour the very hot oil over the scallion and garlic then pour the Sweet Soy Sauce all over the dish. |

1. | 準備甜豉油 ,放在一旁備用。 |
2. | 燒開1/2鍋水。放進金針菇燙2分鐘後用濾網撈出裝進一個深盤裡。 |
3. | 原鍋放進牛肉片燙到8分熟後立即撈出放在金針菇上。將蔥絲,蒜末和辣椒粒鋪在牛肉上。 |
4. | 把2大匙油燒到冒煙後澆在蔥絲蒜末上,再淋上甜豉油即可。 |
