Poached Beef with Enoki Mushroom

Ingredients
Rib Eye beef (thinly sliced)2/3 lb (300g)
Enoki mushroom (trim off bottom/separate into strains/cut in half)1 pack
Scallion (finely julienned)1 stalk
Garlic (minced)1 clove
Red chili pepper (diced)1 ea
Cooking oil2 Tbs
Sweet soy sauce1 portion

Instructions
1.Prepare the Sweet Soy Sauce and set it aside.
2.Boil a 1/2 full pot of water. Poach the enoki mushroom in the boiling water for 2 seconds. Use a strainer to transfer the mushroom onto a deep dish plate.
3.Poach the beef in the same pot until the beef is 80% done. Transfer the beef to the plate and over the enoki mushroom. Place the scallion, garlic and red chili pepper on top of the beef.
4.Heat 2 tbs. of oil until smoking. Pour the very hot oil over the scallion and garlic then pour the Sweet Soy Sauce all over the dish.

金針菇 (切除底部/分成小株/對半切)1
青蔥 (切細絲)1
大蒜 (切碎)1
紅辣椒 (切粒)1
食用油2 大匙
甜豉油 1

做法
1.準備甜豉油 ,放在一旁備用。
2.燒開1/2鍋水。放進金針菇燙2分鐘後用濾網撈出裝進一個深盤裡。
3.原鍋放進牛肉片燙到8分熟後立即撈出放在金針菇上。將蔥絲,蒜末和辣椒粒鋪在牛肉上。
4.把2大匙油燒到冒煙後澆在蔥絲蒜末上,再淋上甜豉油即可。
