(He-Ye-Bing) Doubled Pancake

Instructions
1. | Prepare the fully boiled dough. |
2. | Mix the cooking oil and flour in a small bowl. |
3. | Cut the dough into 40g pieces. Form each piece into a ball, then press it down to a round disk. |
4. | Spread a little bit of oil on the working space. Roll out each dough piece into 10cm (4") dia. round disks. |
5. | Brush the oil/flour mixture on one dough disk then cover it with another dough disk. Slowly roll out the stacked dough disks into round disks with about 20cm (8") diameter. Repeat this step for the other dough pieces. |
6. | Heat a pan. Cook one dough disk over medium heat until done--it takes about 80 seconds. Flip the disk every 20 seconds. Transfer the disk to a plate; peel and separate it into two pancakes. Cover the pancakes with a piece of cloth. |
7. | If the pancakes harden after they cool down, steam them for a few minutes to soften them. |
