炒飯基本 Fried Rice Basics

材料 A Ingredients A
蛋(打散) Egg (beaten)2 個 each
油 Cooking oil3 大匙 Tbs
白飯 Cooked rice 3 杯 cup
青蔥(切小粒) Scallion (diced) 4 根 stalk
材料 B Ingredients B
鹽 Salt 2/3 小匙 tsp
胡椒 Pepper powder 1/4 小匙 tsp
淡醬油(可免) Light soy sauce (optional)1 大匙 tbs

註:如果使用醬油,將鹽的份量降為1/2小匙。
Note: If using soy sauce, reduce the salt to 1/2 tsp.

做法
1.用飯匙或叉子將飯翻鬆。如果是隔夜冷飯,手沾水後將飯捏鬆,再放進微波爐熱2分鐘。
2.炒飯前先將其它配料炒熟並調味。譬如說做雞肉炒飯,就先將醃好的雞肉炒熟。
3.3大匙油在炒鍋裡燒熱後加入蛋炒碎。倒入米飯繼續炒到蛋呈金黃色而飯米粒都鬆散開來,然後加入鹽,胡椒和醬油調味。
4.最後加入步驟2中提到的其它配料和蔥粒,翻炒到所有的材料都熱透。



PROCEDURE
1.Use a rice paddle or fork to loosen the rice. If the rice was stored in a refrigerator or overnight, wet your hand with water and loosen the rice with your hand. Heat the rice in a microwave for 2 minutes.
2.Before the stir-fry the rice, cook and season other ingredients first. e.g. To make a chicken fried rice, marinate and pan-fry the chicken first.
3.Heat 3 tbs. of oil in a wok until very hot then add the beaten egg and scramble. Place in the rice and stir until the egg is golden brown and the rice is loose without any clumps. Mix in the salt, pepper and soy sauce for seasoning.
4.At last add the other ingredients mentioned in step 2 and the diced scallion. Stir-fry until all the ingredients are heated through.
