做法
1. | 雞肉用基本醃料(濃)和1大匙蠔油醃15分鐘。 |
2. | 依照炒飯基本料準備好材料。我這次使用糙米飯。 |
3. | 不沾鍋燒熱後加入2大匙油,紅蔥頭和蒜末炒香。倒進雞肉丁散並到9分熟。盛出備用。 |
4. | 3大匙油在炒鍋裡燒熱後加入蛋炒碎。倒入米飯繼續炒到蛋呈金黃色而飯米粒都鬆散開來,然後加入鹽,胡椒和醬油調味。 |
5. | 最後再拌入雞肉和蔥花拌炒到所有材料都熱透即可。 |
PROCEDURE
1. | Marinate the chicken with the Basic Marinade (Dark) and 1 tbs. of oyster sauce for 15 minutes. |
2. | Follow the instruction of "Fried Rice Basics" to prepare the ingredients. I use brown rice this time. |
3. | Add 2 tbs. of oil, shallot and garlic to a heated pan. Sauté until aromatic. Place in the chicken dices and sauté until they are loose and 90% done. Set the chicken aside |
4. | Heat 3 tbs. of oil in the wok until very hot then add the beaten egg and scramble. Place in the rice and stir until the egg is golden brown and the rice is loose without any clumps. Mix in the salt, pepper and soy sauce for seasoning. |
5. | At last add the chicken and scallion. Stir until all the ingredients are cooked through. |
