自製魚漿 Homemade Fish Paste

材料 Ingredients
冷凍魚片 Frozen Fish Filet2 磅 lb (900g)
鹽 Salt2 小匙 tsp
太白粉 Tapioca Starch6 大匙 Tbs
水 Water6 大匙 Tbs
糖 Sugar3 大匙 Tbs
白胡椒 White Pepper 1 小匙 tsp
沙拉油 Cooking Oil2 大匙 Tbs
蛋白 Egg White 1 個 ea

註:請選用低脂的魚肉。
Note: Please use low fat fish.

做法﹕
1.天氣炎熱時先將攪拌缸放進冰箱冰透。
2.冷凍魚片放在室溫解凍。等到可以切得動但魚肉還是冷凍狀態時,將魚片切成3cm方塊。
3.將魚塊放進食物調理機用Pulse功能分批打成小粒。天氣炎熱時,打好的肉粒要放在冰庫內以免化掉。
4.把魚肉和鹽放進攪拌缸,裝上漿狀腳,用低速打3分鐘 (由1速漸進到3速),再轉成4速打到肉變泥狀有彈性,大約12分鐘。
5.先把太白粉和水先調勻,再與糖,白胡椒粉和油放進攪拌缸用速度2拌勻。可在此時隨各人喜好,加入香菇丁或油蔥酥等等。
6.讓機器繼續運轉,加入蛋白拌勻即可。



PROCEDURE:
1.If the weather is hot, put the mixing bowl in the fridge until it is completely cold.
2.Place the frozen fish filets on a chopping board. Wait until you have no problem to cut through the fish, but the fish is still mostly frozen. Cut the frozen fish into 1" cubes.
3.Put the fish cubes in a food processor. Use the "pulse" function to cut the fish into pea-sized pieces. If the weather is hot, store the processed fish in the freezer to keep it frozen.
4.Put the fish and salt into the mix bowl. Attach a flat beater to the mixer and beat the fish at low speed for 5 minutes (gradually from speed 1 to speed 3). Turn the speed to 4 and continue beating until the fish becomes elastic and paste-like (approx. 12 min.)
5.Mix the tapioca starch with the water. Add them along with the sugar, white pepper powder and oil to the mixing bowl. Mix at speed 2 until all the ingredients are well blended. You can add diced mushrooms, Fried Shallots or any other ingredient you like at this step.
6.With the machine running, add the egg-white and mixt until it is well blended.
