Home Style Stir-Fried Beef with Celery

Ingredients
Beef loin (cut against the grain of the meat into thick strips)2/3 lb (300g)
Chinese celery (cut into 5cm/2" segments)1/3 lb (150g)
Basic marinade (dark)1 portion
Cooking oil2+1 Tbs
Home style stir-fry sauce 1 portion

Instructions
1.Prepare the Home Style Stir-fry Sauce.
2.Marinate the beef with the Basic Marinade (Dark) for 10 minutes. Thoroughly mix the marinated beef with 2 tbs. of oil right before cooking.
3.Place 1 tbs. of oil and beef in a heated non-stick pan; sauté over high heat until the beef is 60% cooked. Transfer the beef onto a strainer to drain out the blood water and excessive oil.
4.Roughly wipe the pan with a paper towel. Add part A from the Home Style Stir-fry Sauce and sauté until aromatic. Add celery and stir for several times.
5.Add beef and part B from the Home Style Stir-fry Sauce; quickly stir for 30 seconds. Serve immediately.

中國芹菜(切5cm/2"小段)1/3 磅 (150克)

做法
1.準備家常醬汁
2.牛肉與基本醃料(濃)拌勻後醃10分鐘。要入鍋前加入2大匙油拌勻。
3.將1大匙油和牛肉絲放進燒熱的不沾鍋內,用大火快炒到6分熟。盛出放在濾網上過濾掉血水和多餘的油。
4.原鍋用紙巾略為擦拭。加入家常醬汁A料爆炒至有香味。加入芹菜略炒。
5.加入牛肉和家常醬汁B料後快速拌炒30秒即可起鍋。趁熱食用。
