Sanshoku Don (Three Color Rice Bowl)

Ingredients
Frozen pea1/2 cup
  Cooking oil1 Tbs
  Salt1/4 tsp
Egg 5 large
  Japanese rice wine 2 Tbs
  Sugar 1 Tbs
  Salt 1/4 tsp
  Soy sauce 1 tsp
  Bonito stock 3 Tbs
  Cooking oil3 Tbs
Ground beef1/2 lb (225g)
Onion (diced)1/2 small
  Cooking oil1 Tbs
  Soy sauce 1/4 cup
  Mirin1 Tbs
  Sugar 2 Tbs
Warm cooked rice for 4 people

Note: You can replace 3 tbs of bonito stock with 3 tbs of water plus 1/4 tsp of Japanese dashi powder.

Instructions
1.Add 1 tbs. of oil, frozen peas and 1/4 tsp. of salt to a heated pan. Sauté over medium heat until the liquid is evaporated. Set the peas aside.
2.Mix eggs, sake, sugar, salt, soy sauce and bonito soup base in a bowl. Heat the same pan then add 3 tbs. of oil and egg mixture. Use a pair of chopsticks to scramble the eggs - do not overcook. Set the egg aside. Use a fork to break any large piece of the egg.
3.Add 1 tbs. of oil and onion to the same pan. Sauté over medium heat until the onion is translucent. Place in the ground beef and sauté until it is loose. Add the soy sauce, mirin and sugar. Cook over medium-low heat until the sauce is almost evaporated. Set the beef aside.
4.Place some rice in a bowl, top with the beef (brown), egg (yellow) and peas (green).

牛絞肉1/2 磅 (225克)
洋蔥(切丁)1/2 個(小)
  食用油1 大匙
  醬油 1/4
  味霖1 大匙
  糖2 大匙
熱飯 Warm cooked rice 4 人份

註:3大匙柴魚高湯可用3大匙水加1/4小匙柴魚粉替代。

做法
1.將1大匙油,冷凍青豆和1/4小匙鹽放進燒熱的鍋裡,用中火炒到水份收乾。盛出備用。
2.把蛋,清酒,糖,鹽,醬油和柴魚高湯在碗裡打勻。原鍋燒熱後加入3大匙油和蛋液,用筷子不斷撥動將蛋炒碎,切忌將蛋炒老。盛出炒蛋,用叉子將大塊蛋切碎。
3.原鍋倒入1大匙油和洋蔥,用中火炒至洋蔥變透明。加入絞牛肉炒散。再放進醬油,味霖和糖用中小火煮到醬汁幾乎收乾。盛出備用。
4.將飯盛入碗裡,上面擺炒好的牛肉(咖啡色),碎蛋(黃色)以及青豆(綠色)。
