Pineapple Shrimp Balls

Instructions
1. | Mix mayonnaise, milk, sugar and lemon juice in a small bowl. |
2. | Marinate the shrimps with the Basic marinade (light) for 10 minutes. |
3. | Coat each shrimp with the yam starch. Set the shrimps aside and wait for 5 minutes to allow the shrimps to release juices that will moisturize the coating. By doing so, the coating will stay in place when you deep-fry the shrimps. |
4. | Deep fry the shrimps in 375°F(190°c) oil until crispy and golden brown, approx. 2 minutes. Transfer the shrimps onto paper towels to absorb excessive oil. |
5. | Heat a pan. Spoon 1 tbs. of the frying oil in the pan; add pineapple and sauté for 30 seconds. Place in the mayonnaise sauce and sauté for 1 minute. Mix in the fried shrimps; stir and shake the pan until every piece of shrimp is coated with the sauce. |
6. | Plate the shrimps and sprinkle with lemon zest. |

1. | 將美奶滋,牛奶,糖和檸檬汁在小碗裡調勻。 |
2. | 蝦仁基本醃料(淡)拌勻醃10分鐘。 |
3. | 醃好的蝦仁拌入地瓜粉後放在一旁等約5分鐘讓其反潮(也就是讓蝦仁汁液稍微潤濕裹粉,這樣炸時裹粉比較不會掉)。 |
4. | 蝦仁用375°F(190°c)油炸酥並呈金黃色後撈出,約2分鐘。撈出蝦仁放置在紙巾上吸取過多的油份。 |
5. | 炒鍋燒熱。舀1大匙炸油到鍋裡並放進鳳梨炒30秒,倒入美奶滋醬再炒1分鐘。加入蝦仁翻炒至每一隻蝦都裹有醬汁。 |
6. | 裝盤後撒上檸檬皮絲即可。 |
