Pineapple Shrimp Balls

Ingredients
Lemon zest1 Tbs
Mayonnaise2 Tbs
Milk2 Tbs
Sugar1 tsp
Fresh lemon juice2 tsp
Shrimp (Shelled/Cut back open/ Deveined/Pat dry with paper towels) 2/3 lb (300g)
Basic marinade (light)1 portion
Yam starch2 Tbs
Oil for frying proper amount
Pineapple (cut bite size)1/2 lb (225g)

Instructions
1.Mix mayonnaise, milk, sugar and lemon juice in a small bowl.
2.Marinate the shrimps with the Basic marinade (light) for 10 minutes.
3.Coat each shrimp with the yam starch. Set the shrimps aside and wait for 5 minutes to allow the shrimps to release juices that will moisturize the coating. By doing so, the coating will stay in place when you deep-fry the shrimps.
4.Deep fry the shrimps in 375°F(190°c) oil until crispy and golden brown, approx. 2 minutes. Transfer the shrimps onto paper towels to absorb excessive oil.
5.Heat a pan. Spoon 1 tbs. of the frying oil in the pan; add pineapple and sauté for 30 seconds. Place in the mayonnaise sauce and sauté for 1 minute. Mix in the fried shrimps; stir and shake the pan until every piece of shrimp is coated with the sauce.
6.Plate the shrimps and sprinkle with lemon zest.

蝦仁(剖開背部/抽去泥腸/擦乾) 2/3 磅 (300克)

地瓜粉2 大匙
炸油 適量
鳳梨(切小塊)1/2 磅 (225克)

做法
1.將美奶滋,牛奶,糖和檸檬汁在小碗裡調勻。
2.蝦仁基本醃料(淡)拌勻醃10分鐘。
3.醃好的蝦仁拌入地瓜粉後放在一旁等約5分鐘讓其反潮(也就是讓蝦仁汁液稍微潤濕裹粉,這樣炸時裹粉比較不會掉)。
4.蝦仁用375°F(190°c)油炸酥並呈金黃色後撈出,約2分鐘。撈出蝦仁放置在紙巾上吸取過多的油份。
5.炒鍋燒熱。舀1大匙炸油到鍋裡並放進鳳梨炒30秒,倒入美奶滋醬再炒1分鐘。加入蝦仁翻炒至每一隻蝦都裹有醬汁。
6.裝盤後撒上檸檬皮絲即可。
