Instructions
1. | Marinate the pork with Basic marinade (dark) and egg yolk for 15 minutes. |
2. | Prepare the Salt & Pepper Sauce ingredients. |
3. | Thoroughly mix the marinated pork with yam starch. Set the pork aside for 5 minutes to allow the pork to release juices that will moisturize the coating. By doing so, the coating will stay in place when you deep-fry the pork. |
4. | Deep fry the pork in 375°(190°) oil until crispy and golden brown, approx. 2 minutes. Transfer the pork onto paper towels to absorb excessive oil. |
5. | Place part A the Salt & Pepper Sauce in a heated pan; sauté until aromatic. Turn off the heat; add the fried pork, part B from the Salt & Pepper Sauce and cilantro; stir quickly to combine. |

1. | 豬肉與基本醃料和蛋黃拌勻後醃15分鐘。 |
2. | 準備椒鹽拌汁材料。 |
3. | 醃好的豬肉與3大匙地瓜粉仔細拌勻後放在一旁等約5分鐘讓其反潮(也就是讓豬肉汁液稍微潤濕裹粉,這樣炸時裹粉比較不會掉)。 |
4. | 豬肉用375°F(190°c)油炸酥並呈金黃色後撈出,約2分鐘。撈出豬肉放置在紙巾上吸取過多的油份。 |
5. | 鍋燒熱後加入椒鹽拌汁A料爆香。熄火後再加入椒鹽拌汁B料,香菜和炸好的肉片快速拌好即可離鍋。 |
