Gomaae Chicken Salad

Ingredients
Split chicken breast1 each
Salt1/2 tsp
Sake1 Tbs
Dried kelp1 5cm x 13cm/2"x5"
Rehydrated wood ear fungus (cut bit size)1/2 cup
Carrot (thinly sliced)1/4 lb (113g)
Snow pea (remove tough side string)1/3 lb (150g)
Celery (cut 2.5cm/1" segment)1/3 lbs (150g)
Sesame dressing1 portion
Miso1 tsp
Scallion (diced)1/3 cup

Instructions
1.Evenly spread 1/2 tsp. of salt and 1 tbs. of rice wine over the chicken breast. Boil the water in a steamer and steam the chicken with a piece of dried kelp in medium-high heat for 20 minutes.
2.Cut the steamed chicken breast into thick strips. Soak the chicken in the juice released from steaming.
3.Boil 2/3 full pot of water and prepare a big bowl of cold water. Blanch the wood ear fungus and carrot in the boiling water for 1 minute. Add snow peas and celery; blanch for another 30 seconds. Turn off the heat. Use a mesh strainer to transfer the vegetables to the cold water. Once they cool down completely, drain the water.
4.Mix the Sesame Dressing ingredients and miso in a blender.
5.Plate the vegetables, chicken (not including juice) and diced scallion; mix with the dressing.

帶骨帶皮雞胸脯1

胡蘿蔔 (切薄片)1/4 磅 (113克)
荷蘭豆 (撕去兩側老筋)1/3 磅 (150克)
西洋芹菜 (切2.5cm/1" 小段)1/3 磅 (150克)
芝麻拌醬 1
味增1 小匙
蔥粒1/3

做法
1.將1/2小匙鹽和1大匙酒均勻地抹在雞胸上。蒸籠裡水燒開後放進雞胸和一片海帶用中火蒸20分鐘。
2.蒸好的雞肉切成粗條並浸泡在蒸出的雞汁裡。
3.燒開2/3小鍋水,另準備1大盆水。放進木耳和胡蘿蔔煮1分鐘,再放進荷蘭豆和西洋芹菜煮30秒。熄火,用濾網撈出所有蔬菜到浸泡到冷水中。待涼透後濾乾水份。
4.芝麻拌醬 材料和味增放進小型食物處理機打勻。
5.把蔬菜,雞肉(不含汁),和蔥花擺盤,淋上醬汁拌勻即可。
