Instructions
1. | Evenly spread 1/2 tsp. of salt and 1 tbs. of rice wine over the chicken breast. Boil the water in a steamer and steam the chicken with a piece of dried kelp in medium-high heat for 20 minutes. |
2. | Cut the steamed chicken breast into thick strips. Soak the chicken in the juice released from steaming. |
3. | Boil 2/3 full pot of water and prepare a big bowl of cold water. Blanch the wood ear fungus and carrot in the boiling water for 1 minute. Add snow peas and celery; blanch for another 30 seconds. Turn off the heat. Use a mesh strainer to transfer the vegetables to the cold water. Once they cool down completely, drain the water. |
4. | Mix the Sesame Dressing ingredients and miso in a blender. |
5. | Plate the vegetables, chicken (not including juice) and diced scallion; mix with the dressing. |

做法
1. | 將1/2小匙鹽和1大匙酒均勻地抹在雞胸上。蒸籠裡水燒開後放進雞胸和一片海帶用中火蒸20分鐘。 |
2. | 蒸好的雞肉切成粗條並浸泡在蒸出的雞汁裡。 |
3. | 燒開2/3小鍋水,另準備1大盆水。放進木耳和胡蘿蔔煮1分鐘,再放進荷蘭豆和西洋芹菜煮30秒。熄火,用濾網撈出所有蔬菜到浸泡到冷水中。待涼透後濾乾水份。 |
4. | 將芝麻拌醬 材料和味增放進小型食物處理機打勻。 |
5. | 把蔬菜,雞肉(不含汁),和蔥花擺盤,淋上醬汁拌勻即可。 |
