Chicken in Chili Pepper Sauce

Ingredients
Boneless skinless chicken breast (cut into 2.5cm/1" cubes)2/3 lb (300g)
Basic marinade (dark)1 portion
Yam starch (or corn starch)1 tbs
Cooking oil2 Tbs
Chili pepper sauce1 portion

Instructions
1.Marinate the chicken with the Basic Marinade (Dark) for 15 minutes
2.Prepare the Chili Pepper Sauce.
3.Mix the marinated chicken with 1 tbs. of yam starch.
4.Place 2 tbs. of oil and chicken in a heated non-stick pan; cook over medium heat until 80% done and golden brown on the surface. Tile the pan so the chicken is soaked in the oil. Transfer the chicken onto a strainer to drain out excessive oil.
5.Add part A from the Chili Pepper Sauce to the same pan; sauté until aromatic.
6.Add part B from the Chili Pepper Sauce and chicken; cook over medium heat until the sauce is thick and the chicken is done.

做法
1.雞肉與基本醃料(濃)拌勻醃15分鐘。
2.準備辣子醬汁
3.雞肉與1大匙地瓜拌勻。
4.不沾鍋燒熱後加入2大匙油和雞肉用中火煎到表面金黃(8分熟),將鍋子略為傾斜所以雞肉可以浸在油裡。盛出雞肉放在濾網過濾掉多餘的油水。
5.原鍋放進辣子醬汁A料用中火爆香。
6.加入辣子醬汁B料和雞肉,用中火翻炒到醬汁變稠雞肉全熟即可起鍋。
